A third-world history major at the prestigious Vassar College in Poughkeepsie, New York helped open his heart and mind to the many different cultures and cuisines around the world. Jonathan’s two decades of domestic and international culinary stints have shaped the passionate chef he is today, so eloquently capturing the essence of a cuisine with flair and charisma in all of his dishes. He is a proponent of local, organic and sustainable cultivation, supporting industries that approach their trade from a global ecological perspective that leaves no indelible footprint. He’s held positions of: Consultant, Co-owner and Culinary Director at Sourced Cuisine; Executive Chef/Partner at The Eastside and Currant Brasserie; Executive Chef at Rancho Valencia and Montage Resort and Spa; Owner of Vertical Wine Bar and Culinary Adventures; and Executive Sous Chef at The Ritz Carlton, The Russian Tea Room, and The Star of the Sea.
